My most favorite dessert of all time is crème brulée... unfortunately for me, it doesn't fit very well into my Weight Watchers plan (it can be done, but it generally takes a LOT of Points) and it's extremely heavy on the dairy... and until I can figure out how to make it with goat milk, it's completely off the menu. Thankfully, Alton Brown came to my rescue with the idea of Bananas Brulée!
Cooking with fire!

It's incredibly simple to make. Slice a banana in half lengthwise, sprinkle evenly with about a tablespoon of sugar and use a kitchen torch to melt the sugar and "cook" the banana. I always put the bananas on a wire rack set in a cookie sheet lined with foil and placed on top of a thick wooden butcher block cutting board (to protect the countertop) and it's worked out really well so far.
The bananas get cooked just enough to be soft and creamy, with a crunchy sugar shell on top. With the new PointsPlus system for Weight Watchers, it's only 1 Point... so a nice light treat! And it satisfies any cravings I may get for crème brulée because the texture is so similar.
For this photo, I set the camera up on a tripod and broke out the new remote shutter trigger for my camera. Worked like a charm and left me free to just concentrate on what I was doing with the torch!
